Corporate Wellness Sous Chef

JOB SUMMARY: The Cliffs is excited about taking another step toward making The Cliffs the healthiest place to live, work and play in America. We are creating a new position, Cliffs Corporate Wellness Sous Chef with a background in Spa Cuisine and experience creating Wellness Menus. This new Sous Chef will work out of our Valley Kitchen and will be responsible for executing great Wellness Menus for Associate Meals at Corp I, Corp II and The Cliffs Valley Monday through Friday. The ideal candidate will also help Sustainable Wellness Solutions with Wellness Programs and Educational Information for all Associates including healthy cooking classes, recipes and demonstrations. JOB DUTIES: • Ensure an inspired and aligned partnership of The Cliffs Corporation and Associates dedicated to encouraging sustainable Total Wellness in all of its attributes including physical, emotional, intellectual, spiritual, social, ecological and financial wellness. • Provide Relational Service to all Associates and occasionally Members, Guests of Members and Discovery Guests. • Focus on Details to provide high quality products and service to Cliffs Associates during their associate meal. • Strive for Continuous Improvement in knowledge, quality, consistency, service, products, work environment, financial metrics, safety, wellness and associate and member satisfaction. • Order and prepare food in accordance with The Cliffs Wellness Strategy. • Execute Wellness menus and work within budgeted guidelines. • Assist the Executive Chef, Sous Chefs and kitchen staff in the preparation of food items. • Set up station and gather all supplies needed to prepare meals for the Cliffs Corporate Office Cafeteria at Corp I, Corp II and the Valley Clubhouse Cafeteria (approx. 200 meals per day). • Transport food items from Cliffs Valley Kitchen to Corp I and Corp II. • Be highly visible and manage the meal period at Corp I. • Prepares healthy proteins, fresh organic vegetables and herbs, healthy grains, salads, cold food items as required for the Associate Wellness Menus and special function purposes. • Prepares healthy sauces and accompanying garnishes for specific menu. • Serves menu items in accordance with established portion and presentation standards. • Provide printed nutritional information and attractive advance planned menus (working with Cliffs marketing) to Associates in all meal locations (as provided by Cliffs Registered Dietician and Nutritionist) • Use food preparation equipment according to manufactures instructions. • Consistently use safe and sanitary food handling practices. • Return soiled food preparation utensils and other small ware items to the proper areas. • Cover, date, and properly store all leftovers and food prep items. • Notify Executive Chef/Sous Chef in advance of expected shortages, ensure Corp I and Corp II are generously stocked. • Ensure all storage areas are neat and all products are stored properly. • Assist in cleaning and break down after shift including trash removal, sweeping, pressure washing, and mopping. • Assist in completing weekly cleaning and maintenance duties. • Observe guidelines related to the maintenance of safe working conditions in the kitchen. • Maintain neat professional appearance and observe personal cleanliness rules at all times • Maintain professional standards, codes of conduct as set forth by Cliffs Associate Handbook. • Maintain consistent positive attitude and positive interactions with all Associates. • Read all Cliffs Wellness Plans, Wellness Books, and Diet Programs in accordance with Sustainable Wellness Solutions. • Actively participate in Cliffs Associate Wellness Programs • Assist with instruction programs for Cliffs Associate Wellness Programs • Work with Cliffs Organic Farm on harvest schedules and menu development. • Assist with other duties as instructed by Executive Chef or Sous Chef. BACKGROUND/EXPERIENCE: • Culinary Art A.O.S. degree with a minimum of 2 years experience or 3 years demonstrated job experience in a resort, spa, hotel, country club, fitness club, banquet operation, and caterer or institution environment preferred. • Demonstrate strong knowledge of Wellness Principles and Fitness. • Expertise in healthy cooking techniques, dietary and nutritional food prep. • Experience with vegetarian cooking and fresh juicing techniques preferred. • Some experience with teaching healthy cooking classes preferred. • Knowledge of classical and present cooking procedures and knife handling skills. • Able to perform basic mathematical calculations • Knowledge of health department regulations. • Basic English language communication skills with ability to follow written and oral instructions. • Pleasant personality and professional appearance. • Able to work in a fast-paced environment, without compromising food quality. • Ability to work flexible hours. This position is primarily Monday through Friday @7:30-4:00 but may include occasional nights, weekends, and holidays. • Valid Drivers License, Good driving record preferred
